Marinated Watermelon

Watermelon is a must at every summer gathering, but let’s be honest… sometimes you slice it open and it’s… meh. This marinated watermelon changes everything. With honey, fresh lime juice, mint and thinly sliced Serrano peppers, and flaky salt, each bite is bright, juicy, and packed with flavor. It’s the perfect upgrade for your 4th of July spread, transforming a simple fruit into a show-stopping, party-ready dish. Sweet, spicy, and impossible to stop eating. This is the watermelon that finally earns its invite to the party.

Servings: 8 Prep time: 10 min Rest Time: 30min

Ingredients:

  • 1 medium seedless watermelon, about 7 lbs

  • 1/2 cup honey

    1/2 cup lime juice

  • 1/4 cup fresh mint

  • 1 Serrano pepper, thinly sliced (remove seeds if you want less heat)

  • 1.5 teaspoon flaky sea salt (plus more to taste)

Ingredients:

01. Slice the watermelon into your desired shape. Cubed, balled or on the rind. Place in a large bowl or platter with a deep edge.

02. Blend together the honey, lime juice, mint and flaky salt until well combined.Pour the marinade over the top and gently toss until all the pieces are coated.

03. You can serve it immediately but for best results, cover and refrigerate for at least 30 minutes (but no more than 3 hours, it will lose it crunch) The watermelon will soak up all the sweet, tangy, and spicy flavors.

04. When you are ready to sever, finish with extra flaky salt, fresh mint, and the thinly sliced serrano. Serve cold and watch it disappear.

Note: This is not a dish that will keep so adjust you ratios according the number of people you plan on feeding.
